Broccoli terrine

450g/1lb fresh broccoli, steamed and drained
1 large onion, chopped
1 clove garlic, chopped
2 free range eggs, separated
1 tbsp fresh chopped parsley
250g/9oz very low fat cottage cheese
2 large or 3 small slices wholemeal bread, made into breadcrumbs
5 tbsp freshly grated parmesan cheese
1 tbsp pesto (preferably fresh home made)
A pinch of low sodium salt
Freshly ground black pepper
Method
1 Line a large loaf tin with non-stick baking parchment.
2 Sweat the onion and garlic until soft in a little olive oil, do not allow to brown.
3 In a food processor, puree the broccoli, onions, garlic, parsley, egg yolks and cottage cheese together.
4 Transfer to a bowl and stir in the breadcrumbs, pesto and parmesan and season as necessary with black pepper and low sodium salt.
5 Beat the egg white until stiff, loosen the broccoli mixture with a spoonful of the egg whites and then fold in the rest carefully.
6 Turn into the lined loaf tin and bake at GM6/200C for about 25-30 mins until set.
7 Allow to cool before cutting into slices.
Broccoli is an excellent source of several protective nutrients: Vitamin K, for healthy bones, sulphur compounds linked to cancer protection, the antioxidant Vitamin C, lutein which protects the eyes, and dietary fibre.
Onions, garlic and herbs all contribute to protection against heart disease and cancer.
